Punschkrapfen ("punch cake") are found in nearly all Austrian bakeries, a favorite pastry since the middle ages. Layers of spongecake are sandwiched between a rich combination of sponge, chocolate, apricot and rum. (Baker Caroline assures us that Austrians just love baking with rum.) The small tea-cake sized sandwiches are then swathed in a coat of distinctive pink glaze, which baker Caroline says, "It's the only pink pastry in Austria. It's always pink-You see a pink pastry there and you automatically know what it is."

Our punschkrapfen are decoratively drizzled with chocolate to add some flare and come in a variety of shapes. They are rich, so plan on one punschkrapfen per person as plenty!
