Sachertorte is a rich, chocolate cake filled with apricot and covered with chocolate ganache, intended for princes.
In 1832, Austrian State Chancellor, Prince Klemens Wenzel von Metternich, asked for a special dessert to impress his guests that night. As the head chef took sick that evening, the responsibility was tasked to 16-year old Franz Sacher, his apprentice. “I hope you won’t disgrace me tonight," were the words of encouragement to the teen from Prince Klemens.
Franz Sacher's creation, the sachertorte, was not a disgrace and become an imperial court favorite. Today it is enjoyed in Austria and around the world amongst commoners and the gentry. Please enjoy with a dollop of whipped cream and very good coffee, and try not to judge your teenager for not impressing any Chancellors by the age of 16!
